ALL ABOUT MILLET

One of the oldest foods known to mankind, millets were the first cereal grains that were consumed by human beings. Cultivated in East Asia as many as 10,000 years ago, this drought-resistant grain, in prehistoric times, was more widely eaten than even rice, particularly in what is now China and the Korean peninsula. Today, India is the largest producer of millet in the world and accounts for about 40% of the entire yield. It is known to be part of the staple diet from prehistoric times.

MAJOR FORMS

Millet has a mild flavour that pairs well with other foods. It is often mixed with other grains or toasted before cooking to bring out the full flavour. There are 2 main forms of millet are available in the market.

MILLET GRAINS

Can be boiled whole and eaten like rice. With a texture much like brown rice, millet can be used in pilafs, casseroles or most oriental dishes that call for rice, quinoa or buckwheat.

MILLET FLOUR

Can be ground into a coarse flour which lacks gluten, can be used in flat breads or mixed up to 25% with wheat flour for use in yeast breads.
